Ingredients

  • 3 Tbsp. vegetable oil
  • 1 small onion, chopped
  • 2 small cloves garlic, minced
  • 1 Tbsp. basil
  • 5 large mushrooms
  • 1 (16 oz.) can tomatoes, drained
  • 1 pkg. mixed vegetables, frozen
  • 1 tsp. salt
  • pepper to taste
  • 1 (6 oz.) pkg. spaghetti, cooked and drained

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add chopped onion, minced garlic, basil, sliced mushrooms, and drained tomatoes; cook for 5 minutes.
  3. Add frozen mixed vegetables, salt, and pepper to taste.
  4. Cook for approximately 10 minutes, stirring often until vegetables are tender but crisp.
  5. Pour the vegetable mixture over cooked and drained spaghetti.
  6. Sprinkle with Parmesan cheese before serving.
