- Combine graham cracker crumbs, sugar, and melted shortening.
- Press firmly on the bottom of a 9-inch spring-form pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the sour cream, sweetened condensed milk, lemon juice, and eggs. Mix well until combined.
- Pour the filling over the prepared crust in the spring-form pan.
- Bake at 350°F (175°C) for about 45 minutes or until set and slightly browned on top.
- Allow the cheesecake to cool completely, then chill in the refrigerator for at least 4 hours.
- Top with chilled cherry pie filling before serving.
