Ingredients

  • 1 lb. hot pork sausage
  • 2 (1 lb.) cans kidney beans
  • 1 (1 lb. 13 oz.) can tomatoes, cut up
  • 1 qt. water
  • 1 large onion, chopped
  • 1 bay leaf
  • 1 1/2 tsp. seasoning salt
  • 1/2 tsp. garlic salt
  • 1/2 tsp. thyme
  • 1/8 tsp. pepper
  • 1 c. potatoes, diced
  • 1/2 chopped green pepper

Instructions

  1. Cook sausage until
  2. brown
  3. and drain thoroughly.
  4. In a large pot, combine
  5. beans,
  6. tomatoes,
  7. water, onion, bay leaf, seasoning salt, garlic salt, thyme and pepper. Add sausage and simmer, covered, for 1
  8. to 1 1/2 hours. Add potatoes and green pepper. Cook, covered,
  9. 15 to
  10. 20 minutes, until potatoes are tender. Remove bay leaf. Makes 8 servings.
