Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 cup sugar
  • 3/4 teaspoon salt
  • 3 teaspoons baking powder
  • pinch of ground nutmeg
  • 1 cup whole milk
  • 1 egg
  • 1/4 cup vegetable oil

Instructions

  1. Preheat oven to 425°F.
  2. Mix dry ingredients in a large bowl.
  3. Slowly add milk, beaten egg, and vegetable oil; mix well. Set aside.
  4. Coat a 10-inch cast-iron skillet with additional vegetable oil and place in the oven for approximately 10 to 15 minutes until the oil starts to smoke.
  5. Remove the skillet from the oven and pour in the batter.
  6. Reduce oven temperature to 400°F and bake for 20 to 25 minutes.
  7. Remove from oven and brown under a broiler if desired.
  8. Turn out onto an ovenproof plate and serve hot with melted butter.
