Crispy skillet red potatoes with garlic, green onions, and spicy cayenne deliver bold flavors, perfect for breakfast, brunch, or as a hearty side dish.

Ingredients

  • 1 1/2 to 2 lb. new red potatoes
  • 2 Tbsp. olive oil
  • 1 bunch green onions
  • 1 to 2 cloves crushed garlic
  • 1/2 tsp. salt
  • 1/2 tsp. cracked black pepper
  • 1/2 tsp. cayenne pepper
  • 3 c. water

Instructions

  1. Wash the potatoes, then cut into halves and quarters for the larger ones.
  2. Smear the olive oil into a large skillet, covering the entire bottom.
  3. Using a spoon, smear the crushed garlic into the bottom of the skillet with the oil.
  4. Arrange as many of the potatoes as possible in the skillet, cut side down, as possible.
  5. Season the potatoes with salt and black pepper.
  6. In a small saucepan, bring 3 cups of water to a boil with bouillon cubes and cayenne pepper.
  7. Pour the broth over the potatoes and boil, uncovered, on medium-high heat until the broth is gone and the potatoes start to sizzle in the garlic and oil.
  8. Let the potatoes brown slightly, then transfer them to a serving bowl.
  9. Sprinkle chopped green onions over the potatoes and serve.
