Juicy skillet tomatoes simmered in butter, garlic, and herbs create a flavorful side dish perfect for summer meals or alongside grilled meats and fish.

Ingredients

  • 9 large tomatoes
  • 1 Tbsp. oleo or butter
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 Tbsp. chopped parsley
  • 1 clove garlic
  • 1 Tbsp. vinegar
  • 2 Tbsp. olive oil

Instructions

  1. Cook tomatoes in butter in a skillet, cut side down, for about 5 minutes.
  2. Combine remaining ingredients: sugar, salt, chopped parsley, garlic, vinegar, and olive oil.
  3. Pour the mixture over the cooked tomatoes.
  4. Simmer for 5 minutes.
  5. Serve hot.
