Ingredients

  • 1 1/4 cups sugar
  • 2 tablespoons flour
  • 1/8 teaspoon salt
  • 1/4 cup soft butter or oleo
  • 3 eggs
  • 1 lemon, peeled and thinly sliced
  • 1 teaspoon lemon rind
  • 1/2 cup water

Instructions

  1. Combine sugar, flour, and salt in a bowl. Blend in softened butter or oleo until well mixed.
  2. Add well-beaten eggs, reserving 1 teaspoon of egg white. Blend until smooth.
  3. Add sliced lemon, lemon rind, and sugar mixture. Stir to combine.
  4. Pour in water and blend well. Turn the mixture into a pastry-lined pan.
  5. Cover with a second crust, slit to allow steam to escape. Seal and flute the edges.
  6. Brush the top crust with the reserved egg white and sprinkle with sugar and cinnamon mixture.
  7. Bake at 400°F (200°C) for 30 to 35 minutes until golden brown.
