Ingredients

  • 1 (3 oz.) pkg. lime gelatin
  • 1 cup boiling water
  • 1/2 pint low-fat cottage cheese
  • 1 (20 oz.) can crushed pineapple in its own juice, drained
  • 1/4 cup low-calorie mayonnaise
  • 1 cup evaporated skim milk

Instructions

  1. Dissolve the lime gelatin in boiling water.
  2. Stir in the low-fat cottage cheese, drained crushed pineapple, low-calorie mayonnaise, and evaporated skim milk.
  3. Pour the mixture into a 1 1/2-quart container.
  4. Chill until set, about 3 to 4 hours.
