Ingredients

  • 1 lb. brown sugar
  • 2 c. white sugar
  • 5 c. vinegar
  • 1 1/2 c. water
  • 5 Tbsp. mustard seed
  • 1 tsp. turmeric
  • 4 qt. ripe cucumbers

Instructions

  1. Peel and quarter ripe cucumbers.
  2. Remove seeds and put in a large pan with 1/2 cup salt.
  3. Let set overnight.
  4. Drain and pour hot water over them, then drain again.
  5. Cook until tender in a mixture of brown sugar, white sugar, vinegar, hot water, mustard seed, and turmeric.
  6. Put the hot mixture into jars.
  7. Turn over to seal.
