Ingredients

  • 2 lb. lean beef round
  • 2 c. chopped onion
  • 2 c. quartered potatoes
  • 2 c. carrot chunks
  • 2 c. large cut celery
  • 1 (8 oz.) can sliced mushrooms, drained
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 5 Tbsp. tapioca
  • 1 tsp. sugar
  • 3 c. tomato juice

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. Place the beef, chopped onion, quartered potatoes, carrot chunks, large cut celery, drained sliced mushrooms, salt, pepper, tapioca, and sugar in a roaster or Dutch oven.
  3. Pour the tomato juice over the ingredients.
  4. Cover the pot tightly with a lid or foil.
  5. Bake in the preheated oven for 5 hours.
  6. Serve hot.
