Ingredients

  • 1 leftover ham bone or bone-in ham steak
  • 6 small boiling potatoes, cleaned, peeled and quartered
  • 2 lb. fresh string beans
  • salt
  • freshly ground black pepper

Instructions

  1. Place the ham bone or piece of ham steak in a heavy saucepan or Dutch oven with water to cover and bring to a boil.
  2. Top and tail the string beans; cut them into 2-inch lengths.
  3. Add the string beans to the boiling ham along with the remaining ingredients.
  4. Lower the heat to a simmer and cook for 1 hour.
