Sweet and crunchy Smackeroons combine egg whites, brown sugar, cornflakes, coconut, and nuts for a delightful treat perfect for parties or snacking, offering a chewy, crispy texture.

Ingredients

  • 2 egg whites
  • 1/8 tsp. salt
  • 1 cup firmly packed light brown sugar
  • 1 tsp. vanilla extract
  • 2 cups cornflakes
  • 1 cup flaked coconut
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Beat egg whites and salt until stiff.
  2. Gradually beat in sugar.
  3. Add vanilla extract.
  4. Stir in cornflakes, coconut, and chopped nuts.
  5. Drop by tablespoons onto well-greased cookie sheets.
  6. Bake at 350°F (175°C) for about 12 minutes.
  7. Remove from cookie sheets at once.
