Ingredients

  • 12 to 16 fresh spot fillets
  • butter
  • salt
  • pepper

Instructions

  1. Arrange the fillets on the smoker grill.
  2. Apply a pat of butter or margarine to each fillet.
  3. Add salt, pepper, and paprika to each fillet for color and flavor.
  4. Add hickory or mesquite chips to the coals according to smoker directions.
  5. Cook slowly for 15 to 18 minutes or until slightly golden in color.
