Ingredients

  • 2 c. buttermilk
  • 2 c. flour
  • 3 eggs
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 Tbsp. sugar
  • applesauce

Instructions

  1. Beat the egg yolks until smooth.
  2. Add sugar, salt, and buttermilk; mix well.
  3. Sift together flour, baking powder, and baking soda, then add to the wet ingredients and stir until combined.
  4. Fold in stiffly beaten egg whites gently into the batter.
  5. Heat aebleskiver pan and lightly grease it.
  6. Pour batter into the pan's holes, add a spoonful of applesauce in the center of each.
  7. Cook until golden brown and cooked through, turning to evenly brown all sides.
