Ingredients

  • 1/4 c. light corn syrup
  • 2 1/2 c. sugar
  • 1/2 tsp. salt
  • 1/2 c. water
  • 2 egg whites
  • 1 tsp. vanilla
  • 1 c. coarsely chopped nuts or assorted candied fruit

Instructions

  1. Combine light corn syrup, sugar, salt, and water in a saucepan.
  2. Cook over medium heat, stirring constantly, until the sugar is dissolved.
  3. Increase heat and cook without stirring to the firm ball stage (248°F), or until a small amount of syrup forms a firm ball that does not flatten when dripped into cold water.
  4. Just before reaching 248°F, beat egg whites until stiff but not dry.
  5. Pour about half of the hot syrup slowly into the egg whites, beating constantly.
  6. Continue cooking the remaining syrup to the soft crack stage (272°F), or until syrup forms threads that are hard but not brittle.
  7. Slowly add the remaining syrup to the egg whites and syrup mixture, beating constantly.
  8. Continue beating until the mixture holds its shape.
  9. Add vanilla and chopped nuts or candied fruit.
  10. Drop spoonfuls onto foil to cool and set.
