- Combine light corn syrup, sugar, salt, and water in a saucepan.
- Cook over medium heat, stirring constantly, until the sugar is dissolved.
- Increase heat and cook without stirring to the firm ball stage (248°F), or until a small amount of syrup forms a firm ball that does not flatten when dripped into cold water.
- Just before reaching 248°F, beat egg whites until stiff but not dry.
- Pour about half of the hot syrup slowly into the egg whites, beating constantly.
- Continue cooking the remaining syrup to the soft crack stage (272°F), or until syrup forms threads that are hard but not brittle.
- Slowly add the remaining syrup to the egg whites and syrup mixture, beating constantly.
- Continue beating until the mixture holds its shape.
- Add vanilla and chopped nuts or candied fruit.
- Drop spoonfuls onto foil to cool and set.
