Smothered Eggplant

Instructions
- Peel eggplant and soak in salted water for 20 minutes.
- Drain. Heat oil and add eggplant, onion, bell pepper, salt and pepper. Cook, covered, on low fire until tender.
- (I like to eat this with a little rice.)
