Ingredients

  • 1 (18.5 oz.) package yellow cake mix
  • 1 small package instant vanilla pudding mix
  • 1 1/3 cups water
  • 4 eggs
  • 1/4 cup vegetable oil
  • 4 cups flaked coconut (divided into 2 cups and 1 cup)
  • 2 tablespoons margarine
  • 1 c. flaked coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9 x 13-inch cake pan.
  3. In a large mixing bowl, blend the yellow cake mix, instant vanilla pudding mix, water, eggs, and vegetable oil.
  4. Beat at medium speed for 4 minutes.
  5. Stir in 2 cups of flaked coconut.
  6. Pour the batter into the prepared pan.
  7. Bake at 350°F (175°C) for 35 to 40 minutes.
  8. Let the cake cool in the pan before serving.
