Ingredients
- 8 (8 oz.) red snapper fillets
- 6 Tbsp. fresh lemon juice ⓘ
- 1/2 c. white wine vinegar ⓘ
- 4 Tbsp. vegetable oil ⓘ
- 4 tsp. sugar
- 2 Serrano chilies, thinly sliced
- 2 cloves garlic, minced ⓘ
- 2 jalapeno peppers, thinly sliced ⓘ
- 1 c. all-purpose flour ⓘ
- 2 tsp. salt ⓘ
- 1 tsp. white pepper
- 1 stick butter (8 Tbsp.) ⓘ
- 4 tomatoes, seeded and chopped ⓘ
- 2 onions, thinly sliced ⓘ
- 2 green bell peppers, thinly sliced

Instructions
- Place fish fillets in a glass baking dish.
- Pour lemon juice over the fillets and marinate for 1 hour.
- Combine vinegar, oil, sugar, sliced serrano chilies, sliced jalapenos, and minced garlic in a small bowl. Set aside.
- In a medium bowl, mix flour, salt, and white pepper.
- Lightly dredge the marinated fillets in the flour mixture.
- Melt 4 tablespoons of butter in a large heavy skillet over medium heat.
- Add the fillets and sauté until golden brown and cooked through, about 3 minutes per side.
- Transfer the cooked fillets to a platter and keep warm.
- Add the remaining 4 tablespoons of butter to the same skillet.
- Add chopped tomatoes, sliced onions, and sliced green bell peppers to the skillet and cook until tender, about 10 minutes, stirring occasionally.
- Spoon the vegetable mixture over the fillets.
- Garnish with lemon wedges and serve, passing the chili mixture separately.
