Ingredients

  • 9 cups sliced carrots
  • 1 cup mayonnaise
  • 4 tablespoons chopped onions
  • 4 tablespoons prepared horseradish
  • 1/2 teaspoon salt
  • dash of white pepper
  • 1/2 cup crushed saltine crackers
  • 4 teaspoons butter

Instructions

  1. Cook the sliced carrots in a small amount of salted water until tender. Drain and place in a lightly greased 1-quart baking dish.
  2. Combine mayonnaise, chopped onions, prepared horseradish, salt, and white pepper in a bowl.
  3. Stir the mayonnaise mixture into the cooked carrots.
  4. Mix crushed saltine crackers with melted butter.
  5. Sprinkle the cracker mixture over the carrots.
  6. Bake at 350°F (175°C) for 30 minutes.
