Snow White Soup is a creamy, cheesy cabbage and cauliflower soup with a velvety texture and rich flavors, perfect for comforting meals and vegetable lovers.

Ingredients

  • 1 medium head cabbage
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 1 pt. milk
  • 1 pt. cream or milk
  • 1 bay leaf
  • 1 1/2 tsp. herb salt (optional)
  • 2 vegetable bouillon cubes (optional)

Instructions

  1. Cook the cauliflower and discard the broth.
  2. Make a roux with the butter and flour, then add to the roux 1 pint of milk and the bay leaf, simmering for 10 to 15 minutes, stirring occasionally.
  3. Remove the bay leaf and blend the cooked mixture, half of the cauliflower, 1 pint of cream or milk, salt, and vegetable cubes until liquefied.
  4. Reheat the soup and add the remaining cauliflower, finely chopped.
  5. Garnish with grated sharp Cheddar cheese before serving.
