- Cook the cauliflower and discard the broth.
- Make a roux with the butter and flour, then add to the roux 1 pint of milk and the bay leaf, simmering for 10 to 15 minutes, stirring occasionally.
- Remove the bay leaf and blend the cooked mixture, half of the cauliflower, 1 pint of cream or milk, salt, and vegetable cubes until liquefied.
- Reheat the soup and add the remaining cauliflower, finely chopped.
- Garnish with grated sharp Cheddar cheese before serving.
