Ingredients

  • 1/3 cup shortening
  • 1 cup very fine sugar
  • 1 1/3 cups sifted cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 teaspoon almond extract
  • 3 egg whites

Instructions

  1. Cream the shortening until smooth.
  2. Add the sugar slowly while creaming the mixture.
  3. Sift the cake flour, baking powder, and salt together.
  4. Combine the milk and almond extract.
  5. Alternately add the flour mixture and the milk mixture to the creamed shortening and sugar, mixing well after each addition.
  6. Beat the egg whites until stiff but not dry.
  7. Fold the beaten egg whites into the batter gently.
  8. Pour the batter into a 10-inch square shallow cake pan.
  9. Bake in a moderate oven at 375°F (190°C) for 30 minutes.
  10. Allow to cool before frosting as desired and cutting into squares.
