Artichoke Quiche

Ingredients

  • 4 eggs
  • 4 bunches scallions
  • 8 lunch crackers
  • 1 bunch fresh parsley
  • 1/2 lb grated sharp cheese
  • 2 (6 oz) jars marinated artichoke hearts
  • dash of Worcestershire sauce

Instructions

  1. Drain oil from the marinated artichoke hearts and reserve the hearts.
  2. Put the oil into a frying pan and heat it.
  3. Chop the scallions and fry them in the oil until limp.
  4. Drain the oil and reserve the scallions.
  5. Crush the lunch crackers.
  6. Beat the eggs slightly.
  7. Mix the eggs with the grated cheese, chopped scallions, crushed crackers, chopped parsley, and a dash of Worcestershire sauce.
  8. Add the reserved artichoke hearts to the mixture.
  9. Pour the mixture into a prepared pie crust or baking dish.
  10. Bake at 375°F (190°C) for about 30 minutes or until set and golden.
