Ingredients

  • 3 cups flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups raisins
  • 2 eggs
  • 1 3/4 to 2 cups buttermilk
  • 2 tablespoons melted shortening

Instructions

  1. Mix flour, sugar, baking powder, and salt in a large bowl.
  2. Add raisins to the dry mixture.
  3. Melt the shortening.
  4. In a separate bowl, beat the eggs and add buttermilk.
  5. Pour the egg and buttermilk mixture into the dry ingredients and stir just until the flour is moistened.
  6. Pour the batter into a greased and floured baking pan.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Slit the dough before serving.
