Ingredients

  • 1/4 oz. active dry yeast
  • 1 cup warm water
  • 3 Tbsp. sugar
  • 1 tsp. salt
  • 1/4 cup vegetable oil
  • 3 cups all-purpose flour
  • cornmeal
  • 1 egg white

Instructions

  1. In a mixing bowl, dissolve yeast in warm water.
  2. Add sugar, salt, and oil; stir until dissolved.
  3. Add 2 cups of flour and beat until smooth.
  4. Add enough remaining flour to form a soft dough.
  5. Turn onto a floured surface and knead until smooth and elastic, about 6 to 8 minutes.
  6. Place in a greased bowl, turning once to grease top.
  7. Cover and let rise in a warm place until doubled in size, about 1 hour.
  8. Punch down the dough and divide into 12 portions.
  9. Roll each portion into a 10 x 1/2-inch rope.
  10. Place 1-inch apart on a greased baking sheet sprinkled with cornmeal.
  11. Let rise, uncovered, until doubled, about 40 to 60 minutes.
  12. Beat egg white and water; brush over breadsticks.
  13. Sprinkle with coarse salt.
  14. Place baking sheet on middle rack of oven and a large shallow pan filled with boiling water on the lowest rack.
  15. Bake at 400°F for 10 minutes.
  16. Brush again with egg white and bake 5 minutes longer or until golden brown.
