Ingredients

  • 6 medium potatoes, peeled, boiled and drained
  • 2 eggs, beaten
  • 4 Tbsp butter
  • 1/2 cup grated Velveeta cheese
  • 1/4 cup grated Romano cheese
  • 1 Tbsp parsley
  • 1/2 tsp garlic salt
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in a mixing bowl and whip with an electric mixer until smooth.
  2. Transfer the mixture to a greased 1 1/2-quart baking dish.
  3. Bake for 30 minutes at 350°F (175°C).
