- Combine the first 4 ingredients in a bowl; cover and stand overnight.
- Next morning, combine sugar, cinnamon and flour; set aside.
- In a large bowl, beat together the eggs and vanilla.
- Add the flour mixture to this and beat well.
- Stir in the raisin mixture and nuts.
- Pour batter into 3 well-greased 1-pound coffee cans and bake at 350° for 60 minutes.
- Place the cans on a cooking rack and cool completely before removing the bottom of the can with a can opener.
- Push the loaf out of the can.
- Slice and serve with butter or cream cheese.
