Ingredients

  • 1 1/2 c. raisins
  • 2 Tbsp. butter
  • 2 c. hot water
  • 2 tsp. baking soda
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 4 c. flour
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. chopped nuts

Instructions

  1. Combine the first 4 ingredients in a bowl; cover and stand overnight.
  2. Next morning, combine sugar, cinnamon and flour; set aside.
  3. In a large bowl, beat together the eggs and vanilla.
  4. Add the flour mixture to this and beat well.
  5. Stir in the raisin mixture and nuts.
  6. Pour batter into 3 well-greased 1-pound coffee cans and bake at 350° for 60 minutes.
  7. Place the cans on a cooking rack and cool completely before removing the bottom of the can with a can opener.
  8. Push the loaf out of the can.
  9. Slice and serve with butter or cream cheese.
