Ingredients

  • zucchini squash, sliced
  • tomatoes, sliced
  • onions, sliced
  • sausage patties, fried and crumbled
  • Mozzarella cheese, shredded
  • salt and pepper to taste
  • Italian seasoning

Instructions

  1. In casserole dish, layer as follows:
  2. squash, tomatoes, onion, sausage and cheese.
  3. Season with salt, pepper and desired amount of Italian seasoning.
  4. Repeat layers.
  5. Bake in 350° oven for 45 minutes to 1 hour.
  6. (Is even better the second day!)
