Ingredients

  • 1 med. onion, diced
  • 1 green pepper, diced
  • 1 cup tomatoes, if desired
  • 1/2 head cabbage, cut into small pieces
  • 4 slices bacon

Instructions

  1. In a heavy skillet, chop bacon and fry until done but not crisp. Remove from skillet and set aside.
  2. Leave 3-4 tablespoons of bacon drippings in the skillet; add green pepper and onion. Cook until onion is clear.
  3. Cut cabbage into small pieces and add to the skillet. Sprinkle with salt and pepper. Cook about 10 minutes, stirring frequently.
  4. Add bacon pieces back to the skillet, cover with a lid, and simmer for about 20 minutes.
  5. Add tomatoes and heat through before serving.
