Ingredients

  • finely chopped onion
  • finely chopped green pepper
  • 1 pkg. dry vegetable soup mix
  • leftovers
  • thyme
  • basil

Instructions

  1. Lightly sauté chopped onion and green pepper in a large pot.
  2. Add the dry vegetable soup mix and water; cook for a while.
  3. Add leftovers from refrigerator and freezer.
  4. Let the soup simmer for some time.
  5. Taste and adjust seasonings with herbs like thyme and basil; add water or V-8 juice as needed.
  6. Near the end of cooking, add noodles.
  7. Optionally, add a splash of white wine, dry sherry, or red wine vinegar for extra flavor.
