Avocado Balls

Creamy avocado balls infused with lemon and paprika, rolled in grated carrots and parsley, perfect as a healthy appetizer or snack for any occasion.

Ingredients

  • 2 ripe avocados
  • 1 Tbsp lemon juice
  • 1 tsp salt
  • 1 tsp paprika
  • 2 Tbsp minced or grated onion
  • 3 or 4 grated carrots
  • 1/4 cup chopped parsley

Instructions

  1. Peel and mash the avocados.
  2. Add lemon juice, salt, chopped parsley, and minced or grated onion to the mashed avocados and mix well.
  3. Form the mixture into small balls.
  4. Roll each ball in grated carrots to coat.
  5. Serve the avocado balls on toothpicks.
