Ingredients

  • 1 box sour cream white cake mix
  • 1 cup brown sugar (packed)
  • 3 eggs
  • 2 small cans crushed pineapple or 13 1/2 oz. can
  • 1/4 cup margarine
  • cinnamon (optional)
  • 1 1/2 cups sour cream

Instructions

  1. Mix two-thirds of the cake mix with brown sugar and margarine until crumbly.
  2. Add cinnamon if desired and mix well.
  3. Beat eggs slightly in a separate bowl.
  4. Stir in sour cream and the remaining one-third of cake mix into the eggs until just combined; batter will be slightly lumpy.
  5. Grease and flour an oblong baking pan.
  6. Spread half of the batter evenly into the prepared pan.
  7. Sprinkle with half of the brown sugar mixture over the batter.
  8. Top with half of the crushed pineapple.
  9. Repeat layers with remaining batter, brown sugar mixture, and pineapple.
  10. Bake at 350°F (175°C) for 30 to 40 minutes until golden and set.
