  • 1 cup sour cream

  2. Simmer until potatoes are very tender.
  3. Mash the potatoes but do not drain.
  4. Add black pepper, Beau Monde seasoning, and ground cumin.

Tips & Substitutions

For a creamier texture, blend a portion of the soup before adding the sour cream. If you don't have Pet milk, regular milk or half-and-half can be substituted. For added flavor, consider using a homemade beef broth instead of bouillon. Adjust the spices to your taste; a touch of cayenne pepper can add a nice kick. This soup makes a great base for adding leftover meats, like from Nana's Hearty Beef Stew.

Serving Suggestions

Serve the Sour Cream Potato Soup with a sprinkle of fresh parsley on top for a pop of color. It pairs beautifully with crusty bread or a simple side salad. For a heartier meal, consider serving it alongside Spoonburgers or a classic grilled cheese sandwich. This comforting soup is perfect for cozy family dinners or as a starter for larger gatherings.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, do so gently on the stove over low heat to prevent the sour cream from curdling. If the soup thickens too much after cooling, add a splash of water or milk to restore its consistency before serving.
