This hearty sourdough oat bread features a wholesome combination of sourdough starter, oats, and wheat germ, offering a nutty flavor and dense texture perfect for breakfast or sandwiches.

Ingredients

  • 1 cup warm water (110°F)
  • 2 (1/4 oz.) packages active dry yeast (about 2 Tbsp.)
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 cups sourdough starter
  • 2 cups oat bran
  • 1/3 cup wheat germ
  • 3 1/2 cups whole wheat flour

Instructions

  1. Grease 2 (9 x 5-inch) loaf pans.
  2. In a large bowl, dissolve yeast and sugar in warm water.
  3. Let stand 5 to 10 minutes or until foamy.
  4. Add oil and sourdough starter to the mixture.
  5. Add dry ingredients and mix well.
  6. On a lightly floured board, knead lightly for about 2 minutes.
  7. Place the dough into greased pans and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
  8. Preheat oven to 325°F (160°C).
  9. Bake the loaves for 20 minutes.
  10. Cover pans with foil and bake for another 15 minutes or until the loaf sounds hollow when tapped on the bottom.
