Ingredients

  • 1 recipe cooked cornbread
  • 5 stalks celery, chopped
  • 2 winesap or Rome apples, chopped finely
  • 6 slices stale bread
  • 2 cups cooked rice
  • 3 medium onions, chopped
  • 4 eggs, well beaten
  • 1 tablespoon poultry seasoning
  • Salt and pepper to taste
  • Turkey stock or chicken broth

Instructions

  1. Cook onions and celery in a small amount of water until tender.
  2. Crumble the cooked cornbread and stale bread together with fingers.
  3. Add cooked rice to the bread mixture.
  4. Mix in chopped celery, onions, apples, salt, pepper, and poultry seasoning.
  5. Add enough turkey stock or chicken broth to make a drop (sloppy) batter.
  6. Stir in well beaten eggs.
  7. Pour the mixture into a well greased 9 x 13-inch pan or baking dish.
  8. Bake at 350°F for 1 hour until browned.
