- Preheat oven to 425°F (220°C).
- In a large bowl, combine the self-rising cornmeal mix and sugar.
- Add vegetable oil to a 10 or 11-inch cast-iron skillet and place in the oven to heat for 10 minutes.
- Meanwhile, in a medium bowl, whisk together the eggs, buttermilk, and 1/4 cup melted butter.
- Pour the egg mixture into the cornmeal mixture and stir until just moistened; the batter should be lumpy.
- Remove the skillet from the oven and swirl the oil to coat the bottom and sides.
- Pour the batter into the hot skillet.
- Bake for 18 to 22 minutes or until golden brown and a wooden toothpick inserted in the center comes out clean.
- Brush the remaining 1/4 cup melted butter over the top of the cornbread.
- Serve warm.
