Ingredients

  • 1 cup grits
  • 4 oz shredded cheese
  • 1/2 cup minced parsley
  • 1 cup dry bread crumbs
  • 2 eggs

Instructions

  1. Boil the grits and 1 teaspoon salt until thick.
  2. Stir in shredded cheese and minced parsley.
  3. Spread the mixture into a 9 x 13-inch pan.
  4. Cover with plastic wrap and freeze for 2 hours.
  5. Cut the chilled grits into rounds.
  6. Beat eggs with 2 tablespoons of water.
  7. Dip each grit round into the egg mixture, then coat with dry bread crumbs.
  8. Heat 2 tablespoons oil in a large skillet over medium heat.
  9. Fry the coated grits until golden brown on both sides.
