Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 egg
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 c. butter, softened
  • 1 c. confectioners sugar

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and lightly grease a cookie sheet.
  2. In a large mixing bowl, cream together 1/2 cup softened butter and white sugar.
  3. Add egg, evaporated milk, and vanilla extract; mix well.
  4. In a separate bowl, combine flour, salt, cocoa powder, baking soda, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop rounded tablespoonfuls of dough onto the prepared cookie sheet, spacing them at least 3 inches apart.
  7. Bake for 6 to 8 minutes until the cookies are firm when pressed.
  8. Allow the cookies to cool for at least 1 hour before filling.
