Ingredients

  • 3 cups plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup margarine, softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 3/4 cup milk
  • 1 teaspoon orange extract
  • 1 teaspoon almond extract
  • 1 teaspoon grated orange rind
  • 1 cup finely chopped pecans

Instructions

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Cream the margarine and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add the flour alternately with the milk to the butter mixture, beating until smooth and well combined.
  5. Stir in the orange extract, almond extract, and grated orange rind, mixing well.
  6. Fold in the chopped pecans.
  7. Pour the mixture into a greased and floured 9 x 5 x 3-inch loaf pan.
  8. Bake at 375°F (190°C) for about 50 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool slightly; remove from the pan.
