Ingredients

  • 3 cups plain all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 3 beaten eggs
  • 3/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 cup chopped pecans
  • 1 3/4 cups large ripe bananas

Instructions

  1. Stir oil into dry ingredients to moisten, then add beaten eggs, pecans, pineapple, and mashed bananas.
  2. Pour the batter into a prepared baking pan.
  3. Bake at 350°F for about 25 minutes.
  4. Cool for 10 minutes before removing from the pan.
