Ingredients

  • 2-3 large cans Italian Style tomatoes
  • salt to taste
  • pepper to taste
  • oregano to taste
  • 1/2-3/4 cup brown sugar

Instructions

  1. Empty cans of Italian Style tomatoes, including juice, into a large heavy pot.
  2. Boil uncovered over medium heat for an hour or more, stirring occasionally to prevent scorching on the bottom.
  3. Season with salt, pepper, and oregano to taste.
  4. When most of the liquid is gone and tomatoes are mostly broken up, add brown sugar, adjusting the amount for taste.
  5. Crumble a slice of bread (with crusts cut off) into the mixture.
  6. This should thicken the puree sufficiently; if not, add more bread crumbs.
  7. Avoid adding bread chunks like in scalloped tomatoes.
