Ingredients

  • 4 chicken breasts
  • 1 medium green bell pepper
  • 1 cup fresh mushrooms, sliced
  • 1/3 cup soy sauce
  • 1 tablespoon poultry seasoning
  • 1/2 teaspoon black pepper

Instructions

  1. Optional: Skin the chicken breasts for a lower-fat version.
  2. Place the chicken breasts into a baking dish.
  3. Add 1/3 cup water to the dish and preheat the oven to 325°F.
  4. Bake the chicken for 30 minutes.
  5. After 30 minutes, add the soy sauce over the chicken.
  6. Continue baking for another 30 minutes.
  7. Add chopped green bell pepper and sliced mushrooms to the dish.
  8. Bake for an additional 20 to 30 minutes, turning the breasts several times to allow the soy sauce to penetrate the meat.
  9. Brown the chicken lightly.
  10. Serve hot with wild, brown, or white rice.
