Ingredients

  • 2 Tbsp. cooking oil
  • 3 eggs
  • 1 bunch green onions and tops
  • 1 (14 oz.) box Minute rice
  • 2 Tbsp. soy sauce

Instructions

  1. Heat oil in a skillet; add beaten eggs and cook, stirring constantly, until scrambled and set.
  2. Add cooked rice, green onions, and soy sauce to the skillet; mix well to evenly color and combine ingredients.
  3. Serve hot immediately.
  4. Optional: Reheat in the oven at 350°F for 30 minutes.
  5. For added protein, stir in 1 cup cooked, diced shrimp or cooked, diced pork tenderloin before serving.
