Ingredients

  • 2 cups cooked spaghetti, rinsed and cooled
  • 1 egg
  • 1/4 cup grated mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  1. Mix the cooked and cooled spaghetti with the egg until well combined.
  2. Heat a frying pan with olive oil over medium heat.
  3. Press half of the spaghetti mixture into the pan to form an even layer.
  4. Sprinkle the grated mozzarella cheese over the spaghetti.
  5. Top with the remaining spaghetti mixture, pressing gently to compact.
  6. Cook until the bottom is golden brown, then flip the omelette carefully.
  7. Continue cooking until the other side is golden and cooked through.
  8. Cut into slices with a pizza cutter or sharp knife.
  9. Serve warm, optionally with spaghetti sauce on the side or on top.
