Struffoli(Honey Clusters)
Sweet honey-coated clusters with crispy exteriors and tender centers, perfect for festive occasions or as a delightful treat for family gatherings and celebrations.

- Sift the flour onto a work surface or in a bowl.
- Make a well in the center of the flour and break the eggs into it. Add a pinch of salt.
- Knead the mixture until smooth and elastic.
- Roll the dough out on a lightly floured board until 1/4 inch thick.
- Cut the dough into 1/2-inch strips and then cut the strips into tiny pieces 1/2-inch long.
- Shape these tiny pieces into balls the size of a filbert using the palm of your hands.
- Heat salad oil to 350°F (175°C).
- Drop three balls at a time into the hot oil and fry until lightly browned, turning constantly with a wooden spoon.
- Remove the fried balls and drain them on paper towels.
- In a saucepan, heat honey and sugar until combined and warm.
- Add the fried balls to the honey mixture and toss to coat evenly.
- Sprinkle with pine nuts (optional) and confectioners sugar before serving.
