Ingredients

  • 3 cloves garlic
  • 1 small onion, chopped
  • 8 oz. fresh mushrooms
  • 10 oz. chopped spinach
  • 28 oz. can Italian plum tomatoes, sliced with juice
  • 1 lb. corkscrew pasta
  • oregano
  • basil
  • bay leaf
  • salt
  • pepper

Instructions

  1. Thaw and drain the chopped spinach.
  2. Saute garlic, chopped onion, and sliced mushrooms in 3 tablespoons of olive oil until soft.
  3. Add canned sliced tomatoes with juice to the sautéed mixture.
  4. Season with oregano, basil, bay leaf, salt, and pepper.
  5. Simmer the mixture for 10 to 12 minutes.
  6. Add the drained spinach to the sauce.
  7. Continue simmering for an additional 20 minutes.
  8. Serve the sauce over cooked corkscrew pasta and garnish with grated cheese.
