Ingredients

  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 yellow pepper
  • 1 cup snow peas
  • 2 tsp olive oil
  • 1 tblsp corn starch
  • 1-1/2 cups chicken stock
  • 2 tbslp parsley or basil

Instructions

  1. cook spaghetti
  2. saute onion, garlic, pepper and snow pease in oil for 3-4 mins
  3. whisk corn starch inot stock
  4. stir into vegetable mix
  5. cook and stir until just thickened
  6. toss hot spaghetti with vegetable sauce and parsley
