Instructions
- Wash spinach well; discard stems.
- Tear leaves into small pieces.
- Pat dry.
- Beat eggs, crumble cheese and mix together. Add to spinach.
- Saute chopped onion in olive oil until browned. Add to spinach.
- Season with salt, pepper and oregano to taste.
