Ingredients

  • 2 lb. fresh spinach
  • 7 eggs
  • 1 lb. fresh Feta cheese
  • 1 onion
  • olive oil
  • 1 to 2 Tbsp. oregano
  • cayenne or black pepper
  • 1 lb. filo dough
  • Pam spray oil
  • salt

Instructions

  1. Wash spinach well; discard stems.
  2. Tear leaves into small pieces.
  3. Pat dry.
  4. Beat eggs, crumble cheese and mix together. Add to spinach.
  5. Saute chopped onion in olive oil until browned. Add to spinach.
  6. Season with salt, pepper and oregano to taste.
