Spanakopitas are delicious Greek-style spinach pies with flaky pastry, savory spinach filling, feta cheese, and herbs, perfect as appetizers, snacks, or party treats. Crispy and flavorful.

Ingredients

  • 1 pkg. Pepperidge Farm puff pastry sheets
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
  • 2 eggs, well beaten
  • 1/2 cup Feta cheese
  • 1 medium onion, finely chopped
  • 2 tablespoons parsley, chopped

Instructions

  1. Thaw pastry sheets for 20 minutes.
  2. Preheat oven to 400°F.
  3. On a floured board, roll each pastry sheet into a 12-inch square.
  4. Cut each square into 16 (3-inch) squares.
  5. Combine thawed and well-drained chopped spinach, beaten eggs, feta cheese, finely chopped onion, and chopped parsley in a bowl.
  6. Spoon the spinach mixture into the center of each pastry square.
  7. Brush egg wash around the edges of each pastry square.
  8. Fold the pastry over the filling to form a triangle and seal the edges.
  9. Place the triangles on an ungreased baking sheet.
  10. Brush the tops with egg wash.
  11. Bake for 20 minutes or until golden brown.
