Ingredients

  • 3 cups milk
  • 1 1/2 envelopes unflavored gelatin
  • 1/4 teaspoon salt
  • 3 egg whites
  • 1/4 cup honey
  • 3 egg yolks
  • 1 teaspoon vanilla
  • fruit (optional)

Instructions

  1. In the top of a double boiler, scald the milk.
  2. Slowly add the gelatin and honey to the hot milk, stirring until dissolved.
  3. Pour a few tablespoonfuls of the hot mixture over the beaten egg yolks, then return the egg mixture to the milk mixture in the boiler.
  4. Place the double boiler over hot water and cook until the mixture is thick and smooth.
  5. Remove from heat and add salt and vanilla.
  6. Fold in the beaten egg whites gently.
  7. Pour the mixture into a large mold and chill until set.
  8. Once set, unmold and serve with optional fruit topping.
