Ingredients

  • 3 medium size potatoes
  • 1 medium size onion
  • 2 eggs
  • 1 Tbsp. olive oil
  • pepper

Instructions

  1. Peel and thinly slice the potatoes and onions.
  2. Heat olive oil in a nonstick pan.
  3. Add the sliced potatoes and cook on medium heat until tender.
  4. Add the sliced onions and sauté until transparent.
  5. Season with salt and pepper.
  6. Beat the eggs in a bowl.
  7. Pour the beaten eggs into the pan with potatoes and onions.
  8. Increase heat slightly and cook until the eggs are set around the edges.
  9. Turn the omelette over and cook a few minutes longer until fully cooked.
